Nicole’s Rice Pudding

This recipe is a go-to for me. It’s so easy to make and tastes delicious! I first tried this recipe with my partner a few years ago at Christmas time and it’s just gotten better and better each time. Now, it’s become a must-have for us!

Rice Pudding

Ingredients

  • 3⁄4 cup uncooked short-grain white rice
  • 2 cups milk
  • ⅓ cup white sugar
  • ¼ teaspoon salt
  • 1 beaten egg
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • Whipped cream (optional)
  • Cinnamon (optional)

Instructions

Step 1

In a pan, bring 1½ cups water to a boil. Stir in rice, cover and simmer over low heat for 20 minutes.

Step 2

Combine cooked rice with sugar, salt and 1½ cups of milk. Cook over medium heat 15 to 20 minutes.

Step 3

Stir in ½ cup milk and egg. Cook 2 to 3 minutes, stirring constantly.

Step 4

Remove from heat and stir in vanilla extract and butter.

Step 5

Serve as-is or make it even better by adding a sprinkle of cinnamon and whipped cream on top.
