Ryan’s Hearty Beef Chili

Nothing is better than playing outside with the family on a clear, crisp, snow-filled day and sitting down to a warm hearty bowl of chili for supper. It will warm you right up right away!

Hearty Beef Chili

Ingredients

  • 2 pounds ground beef (moose or deer meat are good substitutes)
  • 1 white onion, diced
  • 2 to 3 peppers, diced (your choice of green, red, yellow, orange or a mix)
  • 2 celery sticks, chopped
  • 6 to 12 (depending on how much you like them) white mushrooms, quartered
  • 1 can (540 ml) tomato sauce
  • 2 medium-sized tomatoes, diced (or substitute 1 can diced tomatoes – there are flavoured diced tomato options you can consider as well)
  • 1 can red kidney beans
  • 1 can brown kidney beans
  • 2 tablespoons cumin (add more to taste)
  • Salt and pepper (optionally use Montreal steak spice instead of pepper)
  • 1 clove garlic, minced

Optional ingredients

  • 1 can Heinz baked beans (maple-flavoured is delicious)
  • Red chili peppers
  • Hot sauce
  • ½ to ¾ cup brown sugar
  • Shredded cheese (for topping)
  • Chives (for topping)
  • Sour cream (for topping)
  • Garlic bread

Instructions

Step 1

For this recipe, you’ll need a large frying pan or an electric frying pan that can be covered.

Step 2

In frying pan, brown ground beef and onion. Add salt and pepper to taste, along with half the minced garlic. Once browned, drain excess grease.

Step 3

Add remaining ingredients to the pan, including the water from the cans of kidney beans. Add in optional baked beans and hot spices.

Step 4

Stir ingredients together until combined and let simmer on medium/medium-high heat, covered, until it starts to bubble. Reduce heat to medium and let cook, covered, for 20 minutes. Stir occasionally to prevent sticking to bottom of pan.

Step 5

After 15 to 20 minutes, check to see if vegetables are cooked.

Step 6

Remove lid, give chili a good stir and continue cooking for further 5 to 10 minutes, uncovered, to cook away any excess liquid. Keep stirring to prevent sticking to bottom.

Step 7

Check flavours and add more hot spice, pepper, garlic to taste. If you like a hint of sweetness, add brown sugar. The end result should be a nice thick chili.

Step 8

Serve with garlic toast and top with shredded cheese (let melt), chives or sour cream if you like.
