My wife, Lauren, created this recipe, which combines some of my favourite foods. Wagon wheel pasta is a must for this one, because it holds the sauce well and just tastes the best!

Chicken Surprise

Ingredients

  • 2 chicken breasts
  • ½ cup flour (for breading)
  • 2 eggs (for breading)
  • ½ cup bread crumbs (for breading)
  • 4 cups wagon wheel pasta
  • 1 white onion
  • 1 jar tomato sauce (the cheaper the better – Ragu is good)
  • 3 or 4 pinches Italian spice mix
  • 500 g Cheddar cheese
  • 500 g Grana Padano cheese
  • 3 cups (at least) bread crumbs for the topping
  • 1 cup butter

Instructions

Step 1

Cut chicken breasts into strips.

Step 2

Bread them (dunk them in flour, then eggs, then bread crumbs).

Step 3

Cook your wagon wheels and dump them in an 8 x 8-inch caserole dish so that they come up about half way.

Step 4

Dice and then cook an onion, and then mix in your cheap tomato sauce and a few pinches of Italian spice mix.

Step 5

Lay the breaded chicken strips on top.

Step 6

Grate cheddar cheese and Grana Padano on top.

Step 7

Melt enough butter to evenly coat 3 cups of bread crumbs. Mix butter and crumbs together until the bread crumbs are fully coated.

Step 8

Sprinkle the bread crumbs evenly over the top.

Step 9

Cover with tin foil and bake at 350°F for...a while (I guess until the cheese is melty).

Step 10

Remove the foil and then broil for a couple minutes to brown the top.
