Elena’s Baked Cheese Crepes

This is not necessarily a recipe for Christmas, but for some reason it reminds me of the beautiful snow we used to have for Christmas back home when I was a child. I liked having this dish with some warm linden and mint tea.

Baked Cheese Crepes

Ingredients

  • 5 crepes
  • 2 cups sweet farmer’s cheese or ricotta
  • 3 tablespoons sugar
  • 1 egg
  • 1 teaspoon lime rind, grated
  • Pinch of salt
  • 2 tablespoons honey or maple syrup

Instructions

Step 1

In a bowl, add the cheese, sugar, egg, salt and lime rind. Mix to bring all ingredients nicely together.

Step 2

Place ⅕ of the filling in the centre of a crepe. Fold the top half over, then bottom, then finish off with the sides, pretty much like an envelope. Place it in the baking dish seam side down. Do the same with the rest.

Step 3

Bake until the top of the crepes gets golden (about 10 to 15 minutes). Remove the dish from the oven and let it sit a bit.

Step 4

Move the crepes to a serving plate and drizzle with honey.
