Kurtis’s Holiday Matcha Shortbread Cookies

This is a newer tradition for our family. It combines my love of (matcha) tea, my kids’ love of sweet snacks, and fun, festive colours.

Holiday Matcha Shortbread Cookies

Ingredients

  • 1 cup butter
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 4 tablespoons matcha powder
  • ¼ teaspoon salt

Instructions

Step 1

Mix butter, sugar and vanilla extract together for a few minutes until light and fluffy.

Step 2

In a separate bowl, combine flour, matcha powder and salt. Gradually add this mixture to the butter mixture.

Step 3

Gather and press the dough into a flattened disk and chill until firm, about 2 hours.

Step 4

When ready to bake, preheat the oven to 325°F and line 2 baking sheets with parchment paper.

Step 5

Roll out dough to a ¼-inch thickness on a floured surface and cut circles with a 2-inch round cutter. Place cookies on the prepared baking sheet.
