Decorating sugar cookies at Christmas time is something I did as a child. Seeing my wife and daughter continue this activity is one of those things that makes the holidays feel like the holidays. What makes this even better is that they began doing this without any prompting from me. It’s as though it is an innate part of the holidays built in to the DNA of my family. It’s also important to note that a plate of these cookies are left for Santa. He clears the plate each year, so I’m pretty sure that proves there is something special about them!
In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder and salt. Cover and chill dough for at least one hour (or overnight).
Preheat oven to 400°F (200°C). On a floured surface, roll out the dough ¼ to ½-inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6 to 8 minutes in a preheated oven. Cool completely.
In a mixing bowl, cream butter until fluffy.
Add sugar and continue creaming until well blended.
Add salt, almond extract and whipping cream.
Blend on low speed until moistened. Beat at high speed until frosting is fluffy.
