Christina’s Refrigerator Cookies

When we were kids, we would make a ton of cookies and almond roca and wrap them in cute packages and put them on the Christmas tree near the main entrance to our house. People visiting would take the treats from the tree over the holidays. They weren’t really allowed to leave without taking something. We made a lot of treats to decorate the tree. Mom used to call it the giving tree. Yeah, my mom’s pretty cute.

Refrigerator Cookies

Ingredients

  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 1 square unsweetened chocolate (if making chocolate pinwheels)

Instructions

Step 1

2/3 cup butter

Step 2

Cream butter, then gradually add brown sugar and cream well.

Step 3

Add egg and vanilla and beat well.

Step 4

Mix flour, salt and baking soda together. Stir into batter.

Step 5

Use dough as it is or make pinwheels.

For pinwheels

Step 1

To make chocolate dough, add 1 square melted unsweetened chocolate to half of the dough.

Step 2

Roll out rectangles of chocolate and vanilla dough ⅛-inch thick. Place one on top of the other and roll together

Step 3

Shape finished dough into long rolls, about 2 inches in diameter.

Step 4

Wrap with waxed paper and chill until hard (about 1 to 2 hours)

Step 5

Slice thinly, place on ungreased cookie sheet.

Step 6

Bake at 350°F for 8 to 10 minutes.
