Kelsey’s Candied Sweet Potatoes

My dad and I love pumpkin pie, and this has a similar flavour but is a little more “healthy.” It complements the normally savoury parts of Christmas dinner well.

Candied Sweet Potatoes

Ingredients

  • 4 pounds sweet potatoes, quartered
  • 1 ¼ cups margarine
  • 1 ¼ cups brown sugar
  • 3 cups mini-marshmallows
  • Ground cinnamon to taste
  • Ground nutmeg to taste
Note: My mom recommends using half the sugar and half the butter. It’s very sweet.

Instructions

Step 1

Preheat oven to 400°F.

Step 2

Grease 9 x 13-inch baking dish.

Step 3

Bring a large pot of water to boil, add sweet potatoes and boil until slightly underdone, about 15 minutes. Drain, cool and peel.

Step 4

In a large saucepan over medium heat, combine margarine, brown sugar, 2 cups marshmallows, cinnamon and nutmeg. Cook, stirring occasionally, until marshmallows are melted.

Step 5

Stir potatoes into sauce. While stirring, mash about half the potatoes, and break others into bite-sized chunks. Transfer to prepared dish.

Step 6

Bake for 15 minutes. Remove and cover top evenly with marshmallows. Bake until marshmallows are golden brown.
